Bedford Cab Sauv 07_1in_web From the newly designated appellation of Happy Canyon in the warmer, eastern Santa Ynez Valley, comes our 2007 Cabernet Sauvignon. A warmer climate necessary for this late ripening variety ensured a completely mature grape and the flavors to go with it. 30 months barrel age in french oak provides grace. This is a rich, deeply colored, impeccably well mannered wine with everything in its proper place and just enough intrigue to take it to the next level. The earthy blackberry character backed by notes of vanilla from extended oak aging follows through to its silky, long finish. Its sophistication and flare makes this the Cary Grant of Cabernets.
