2012 Cabernet Sauvignon, Santa Barbara County

Bedford2012CabernetSauvignon-250-webThere are microclimates in Santa Barbara that allow grapes not always associated with this region to thrive. Bordeaux varieties can flourish as long as the growing conditions are correct. The fruit for our Cabernet Sauvignon is from eastern Santa Ynez Valley where the weather is a bit warmer. Here Cabernet Sauvignon, a later ripening variety, is able to achieve complete maturity. The wine has dark fruit flavors of black currant and black cherry enhanced by nuances of Oriental spice, black pepper, toasty oak and tobacco. Long term barrel aging gracefully brought all the elements together making it reminiscent of a well aged Old World Bordeaux. Serve with bacon-wrapped filet mignon or grilled bone-in rib-eye steaks with blue cheese. Bottle Price: $39.00
